Wine Profile
Tasting Notes
Color | Medium red with ruby red hues.
Aroma | Dark cherries, plums and blackcurrant with some herbaceous notes lifting the back palate.
Dark fruits and plums with generosity on the palate show it is ready to enjoy now and over the next 4-5 years. Some French oak texture shows on the finish of this very approachable wine.
Vineyard Notes
A wet Winter and Spring provided the region with plenty of sub
surface moisture. Mild temperatures coming into vintage
contributed to excellent fruit and in turn wine quality. The quality
of the red grape varieties was excellent with wonderful flavours.
With perfect ripening and harvesting conditions the quality is one
of the best we have seen in recent times. At Paulett Wines we do
not irrigate our vines and this has resulted in the grapevine root
structure developing to withstand irregular rainfall, heat waves and
drought conditions superior to irrigated vineyards.
Food Pairing Notes
Slow cooked braised beef, traditional roast lamb and hard cheeses.
